Yesterday, I was at the library and I saw a fellow community member. She told me that she noticed a certain plant had taken over many of the garden beds. The community member (whom I’ll leave anonymous), told me it’s called ‘purslane’ and that in Turkey it’s eaten as a salad, typically with tomatoes and a light dressing of lemon juice, olive oil and salt.

So, if you’re passing by the garden and want to try something new for dinner tonight why not pick some purslane!purslane.jpg
