On Sunday, several community members joined Alicia Dellegrazie for our monthly Community Kitchen. The theme was burgers, and as always Alicia didn’t disappoint. She had been experimenting in her own kitchen with several recipes, both beef and vegetarian based.
The vegetarian burgers were truly delicious as even Alicia’s daughter who initially turned her nose up at the lentils in the burgers chose a vege burger over a beef!
The Monthly Community Kitchen is open to all as we gather over food and share tips and recipes that focus on healthy, delicious and affordable meals. Click here to register for the October Kitchen which will be held Oct 22nd 3 – 6 pm at the East York Community Centre.
Vegetarian Lentil Burgers
- 1 can Red Lentils – crush as much as possible with potato masher or fork
- 1 onion
- 1 pepper (red, yellow or orange)
- 3 cloves garlic
- 3 eggs
- Handful of fresh parsley
- Pinch of salt and pepper
- 1/2 cup of bread crumps
Mash the lentils with a potato masher or fork. Put the remaining ingredients in a blender and blend until smooth. Add lentils. Add 1/2 cup bread crumbs and mix with spoon. Wait a few minutes. If mixture is too wet add more bread crumbs 1/4 cup at a time until the mixture is easy to form into patties and feels similar to beef burgers. Shape patties carefully. Cook medium to medium-low heat in pan sprayed with oil until nice and brown. Enjoy!
